Measuring is one of the most important skills a cook can have. Be able to measure accurately will ensure your dishes turns out correctly. Measuring is especially important in dishes like cakes, where if you have too much or too little of an ingredient, it can alter the whole dish and mostly importantly the final presentation.
Most websites and books, like this website will use Australian Standard Spoon and Cup measurements (metric measurements). However some cookery books and websites depending on where and when they were published will use different systems. Such as the imperial system (this means pounds and ounces). When measuring most recipes, unless otherwise stated call for levelled measurements. This means level the cup or spoon off flat. This can be completed using the flat side of a knife to wipe excess off , this can be seen in in the pictures. However when measuring liquids place the measuring cup or jug on a flat surface and fill to the necessary amount, this is when the bottom on the meniscus reaches the line marked on the jug. Ingredients that are solid, will be difficult to measure exact amount, so an accurate set of electric kitchen scales will be required to gain measurements.
