Allergies & Contamination
Food allergens are found in peanuts, eggs, milk products, gluten, fish and shellfish soya bean, tree nuts, sulphites – 10mg or more, sesame seed. When cooking for people who have allergies to any of these, extreme care needs to be taken. Whether that means preparing their meal separately, cooking the allergen free food before the food with allergens, removing all allergens that the people you are cooking for are allergic to from the meal or having everybody eat the same meal. A cook needs to be sure it is safe for these people to eat and what ingredients are contained within their food.
A cook should take it upon themselves to prevent contamination and protect the people eating their food. The same care, that is taken for allergies should also be taken when preparing food for people who have special dietary requirement, who are intolerant to or choose not to eat certain foods, like a vegetarian, vegan, coeliac or a person whose religion have special diets they are required to follow.
