Blue Berry Pancakes (Serves 4)
Ingredients
1 cup, self-raising flour
½ cups + 2 tablespoons, light vanilla yogurt
150 mL, low-fat milk
1, egg
1 punnet, fresh blueberries
Oil spray, or 2 teaspoons vegetable oil
Method
Place the flour in a mixing bowl.
Combine yogurt, milk and egg in a separate bowl. This is the yogurt mixture.
Add the yogurt mixture to the flour and mix until smooth. You may need a whisk.
Fold the blueberries in gently.
Heat a not stick frypan over medium heat. Spray lightly with oil or heat 2 teaspoons of oil and distribute evenly over the pan.
Pour ¼ cup measures of the pancake batter into the pan and cook on each side for 1-2 minutes, or until golden.
Repeat the process with the remaining batter.
Serve hot with toppings of your choice.
