Chorizo and Green Pea Risotto (Serves 4)

Ingredients
  • 2 cups arborio risotto rice
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 2 chorizo sausages, sliced 
  • 1 cup peas
  • 5-6 cups hot chicken or vegetable stock
  • 6 tabelspoons parmesan cheese, grated
  • Salt and pepper, to taste
  • Parmesan cheese, to serve




Method
  1. Heat half of the oil in a saucepan over moderate heat and panfry chorizo sausage until lightly browned, 3-4 minutes. Remove from pan.
  2. Reduce the heat to medium and panfry onions in remaining oil, 2 minutes. Add rice and cook for 2 minutes. Stirring continuously
  3. Add 1 cup of stock at a time, tiring until absorbed before adding each new addition (about every 5 minutes). Continue until rice is tender, about 25-30 minutes. Stir in chorizo sausage and peas in the last 5 minutes.
  4. Stir in the Parmesan cheese and season to taste.
  5. Serve immediately.
