No Cook Coleslaw (Serves 4)

Tip: Other Ingredient you might like to add are apple slice, finely dices red onion, raisins, thinly slice radishes and pecans or walnuts

- 2 carrots, peeled and grated
- ¼ red cabbage, shredded
- ¼ white cabbage, shredded
- Few sprigs of parsley, chopped
- 6 tablespoons, natural yogurt
- 2 tablespoon, mayonnaise
- ½ teaspoon, mustard
- 1 lemon, juiced

Method
- Place the grated carrot, both lots of shredded cabbage and the chopped parsley in to a large bowl.
- In another bowl, mix natural yogurt, the mayonnaise, the mustard and lemon juice. Stir to combine.
- Add the mixture to the big bowl and stir again to coat the vegetables.
